Cranberry Coffee Cake

One of our favorite Christmas traditions is having this delicious coffee cake for breakfast on Christmas morning. The aroma of cranberry and almond wafting through the house is almost enough to make you wait to open the presents...almost.

  • Cranberry Coffee Cake1 stick butter 
  • 1cup sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups flour
  • 1 cup sour cream
  • 1 teaspoon almond flavoring
  • 1 can whole cranberry sauce (slightly drained)
  • ½ cup nuts (sliced almonds or chopped walnuts--optional)

Cream butter. Stir in sugar gradually. Add eggs one at a time. Add dry ingredients alternately with sour cream. Add almond flavoring. Grease and flour a bundt pan. Put ½ of the batter into the pan, then spread ½ of the cranberry sauce on it. Pour on remaining batter. Top with cranberry sauce and sprinkle on nuts. Bake at 350 degrees for 50- 55 minutes. Cool 15 minutes then take the cake out of the pan.

Vanilla Drizzle

  • ¾ cup confectioners sugar
  • 1 teaspoon (or more) water
  • ½ teaspoon almond flavoring

Mix together and drizzle over cooled cake.
